Vegetable Biryani
A fragrant rice dish with mixed vegetables and aromatic spices.
Ingredients
For Rice
- 2 cups Basmati rice
- 4 cups water
- 1 bay leaf
- 4-5 whole cloves
- 1 cinnamon stick
- Salt to taste
For Vegetables
- Mixed vegetables (choose any):
- 1 cup cauliflower florets
- 1 cup green beans, chopped
- 1 cup carrots, diced
- 1 cup green peas
- 2 potatoes, cubed
- 2 onions, sliced
- 2 tomatoes, chopped
- 4 green chilies
Spices
- 2 tbsp biryani masala
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 cup yogurt
- Fresh mint and coriander leaves
Instructions
- Prepare the rice:
- Wash and soak rice for 30 minutes
- Boil water with whole spices and salt
- Add rice and cook until 70% done
- Drain and set aside
- Prepare the vegetables:
- Heat oil in a large pan
- Fry onions until golden brown
- Add tomatoes and cook until soft
- Add all vegetables and spices
- Cook until vegetables are tender
- Layer and cook:
- Spread vegetable mixture in a heavy-bottomed pot
- Layer the partially cooked rice on top
- Add saffron milk and fried onions
- Cover tightly and cook on low heat for 20 minutes
- Serve hot with raita and papad
