Vegetable Biryani

A fragrant rice dish with mixed vegetables and aromatic spices.

Instructions

  1. Prepare the rice:
    1. Wash and soak rice for 30 minutes
    2. Boil water with whole spices and salt
    3. Add rice and cook until 70% done
    4. Drain and set aside
  2. Prepare the vegetables:
    1. Heat oil in a large pan
    2. Fry onions until golden brown
    3. Add tomatoes and cook until soft
    4. Add all vegetables and spices
    5. Cook until vegetables are tender
  3. Layer and cook:
    1. Spread vegetable mixture in a heavy-bottomed pot
    2. Layer the partially cooked rice on top
    3. Add saffron milk and fried onions
    4. Cover tightly and cook on low heat for 20 minutes
  4. Serve hot with raita and papad
